Baby Boomer Babbling-er-Musings

I'm from the baby boomer generation. I have a mop of white hair, courtesy of my gene pool. And a botox-free face that sports frown lines in the forehead and around the eyes. Love handles instead of a waistline. Can't say I'm exactly crazy about any of these old age indicators but I accept them with grace. And now I've lived long enough now that I ponder on a lot of things, new and old.

Key Lime Pie Recipe 'n Key Largo Sunsets

My first taste of key lime pie was back in 1989 while on vacation in Key Largo.  After an afternoon of diving and/or snorkeling, we would rush to Papa Joe's to dine on the early bird seafood menu and share a slice of Papa Joe's key lime pie after our meal.

After dinner we would hurry back to our condo, sit together on our favorite bench at the dock, and watch those incredible sunsets you can only find in the Florida Keys!

I have since learned that all Floridian aficionados of key lime pie know that the real pie is not green, but rather a pale yellow color.  The green color is added simply to please the landlubbers.  Papa Joe's delicious key lime pie was a pale, creamy yellow and it was cheek puckering, lip smacking good!


I have made key lime pie the "real" way before but when in a hurry to prepare a quick dessert, this easy recipe can't be beat!



Key Lime Pie
Also can be adapted for Weight Watchers (WW)

1 box lime jello (use sugar free jello for WW)
1/4 cup boiling water
2 containers (8 oz ea) lime yogurt (I prefer lime Greek yogurt)
1 8 oz Cool Whip (fat-free or "light" for WW)
1 Graham Cracker Crust (low-fat crust for WW)

►Bring 1/4 cup water to boiling. Add jello and whisk briskly until dissolved.
Pour into larger bowl to cool slightly.
Add both containers of lime yogurt and whisk to mix well.
►Use a wooden spoon to fold in Cool Whip. Gently fold in the cool whip until mixed, don't whip or beat.
Pour mixture into the graham cracker crust.
Chill for two hours or overnight.
Slice and enjoy!

This pie recipe will work with any flavor as long as the jello and yogurt flavors are the same.  Thanks to Deborah B., who shared this recipe with me back when we were on Weight Watchers together.

NOTE:  I used Weight Watchers a long time ago and back then the pie was 8 servings and 3 points.  I understand the WW points system has changed so the points may be different.
